Picked up a leaflet on the Bristol Open Doors Day, which mentions tours of the inner workings of Temple Meads Station - which requires advanced booking, sturdy shoes and a torch. - 0117 934 8466
Clifton Rocks Railway open Sat and Sun.

There are also other sites outside of Bristol that are open that weekend as part of 'Heritage Open Days', which may be of interest.

I tried to get on this tour of Temple Meads was booked up over a month in advance. (I tryed on the 8th of Aug and got the fully booked phone message)

I've been lucky enough to have an unguided tour of underground temple meads.There are places down there that probably have hardly seen a soul since they stopped working there. As far as I know it stretchesas far as platform 7 then its blocked off.
There was stories that tunnels did lead to bath road and right out on to the banks of the river avon,however due to the tunnels being what looks like being deliberatly blocked I dont know.

Looks like the 'Bristol Industrial Archaeological Society' were doing a similar visit a couple of weeks ago and were short of numbers.
